Gluten-Free Foods for Super Bowl Sunday

Who gets excited to join friends and family to watch the Super Bowl only to realize you’re going to have to think ahead so you don’t starve? I am all about celebrating sports and holidays, but sometimes it’s nice to feel included and not eat power bars every couple of hours.

Whether you like to cook or are happy bringing a simple appetizer, here are some celiac-friendly* options for you to prepare for game day! Even the other team will enjoy them.

Gluten-free Appetizers and Sides

Nachos

My attempt at making a taco salad last night really ended up being nachos. I browned some ground turkey, spiced it up with garlic salt, pepper, chili powder, turmeric, and cumin (it’s hard to find taco seasonings you can trust!), and made a chickpea/avocado combo on the side. I broke up some of Old El Paso’s gluten-free blue corn taco shells, combined everything, and voila! A tasty, colorful, and filling dish. Cheese and sour cream (and whatever else you like) can also be added.

Chips and Salsa

If you don’t want to spend too much time cooking or shopping, this option is for you (and me – this is what I’m doing Sunday)! Grab your go-to gluten-free chips and favorite flavor of Newman’s Own salsa. I recommend Xochitl corn tortilla chips and the pineapple salsa. Double check the label to ensure the flavor you choose is gluten-free!

Fruit and Vegetables

If you’re looking for a simple yet healthy contribution, you can always create your own fruit and/or veggie platter!

Celiacs beware: sometimes pre-made fruit/vegetable platters are prepared in cross-contaminated areas.

Pretzels and Popcorn

Snyder’s Gluten-Free Pretzels are my favorite, but Glutino’s pretzels are also delicious.

Certified gluten-free popcorn options that are easy to pick up on your way to the game include Angie’s BOOMCHICKAPOP and Skinny Pop.

Gluten-free Pizza

My go-to pizza is Against the Grain’s Gourmet Three-Cheese Pizza. This is my absolute favorite, and I have converted gluten-eating human beings to this delicious gluten-free treat! Take the 18 minutes before you leave to cook it in your non-cross-contaminated apartment, and you’ll be quite content at your friend’s house!

Gluten-free Burgers

I considered two options for burgers – Bubba's Burgers and homemade apple-turkey burgers. With Bubba Burgers, all you have to do is cook the patties. The apple-turkey burgers I make take a little more effort, but they are really tasty! Here is the recipe I use from Anti-Inflammatory Diet in 21 by Sondi Bruner:

You will need

1 red onion (finely chopped)

1 apple (washed and grated)

1 pound ground turkey

¼ cup chickpea flour (I use almond flour)

½ teaspoon salt

Instructions

Preheat the oven to 350 degrees.

Combine onion and apple.

Add ground turkey, chickpea flour, and salt. Mix. If mixture seems too wet, add more chickpea flour.

Make patties and place on parchment-papered sheet.

Bake for 30 minutes or until internal temperature reaches 165 degrees.
